All the greens are actually super-foods, they are naturally loaded with a wide range of vitamins, minerals, proteins, antioxidants, and enzymes that are easily absorbed by the body. They are especially rich in chlorophyll, which is known to provide a variety of benefits to our body, like blood purification and anti-inflammatory benefits.
You could include these greens into your diet in different ways:-
- Blend along with other ingredients like nuts to make salad dressings or dips
- Simply fine chop and sprinkle over salads.
- You could even dry the leaves (in shade and not direct sunlight), powder and store. This powder can be added to curries.
Alfalfa is called "rijka" in northen India, is basically a fodder crop. It is a perennial plant, rich in protein, mineral and calcium. It is native of South-West Asia. It is winter season crop and mainly cultivated in Gujarat, Madhya Pradesh, Maharashtra and Rajasthan.
