Cabbage Carrot Sambharo - Gujarati style, raw!

We have always eaten our regular salads, which are loaded with our cucumbers and tomatoes. Also heard about our infamous Greek salad. The exotic vegetables stir fry is also healthy and packed with nutrition.

In the middle of all these comes from the land of Garba and sweet dal, Sambharo. Sambharo is a traditional Gujarati dish which consists of a lot of vegetables together, which are stir-fried. It is a highly nutritious salad with not only cabbage and carrot, but you can add on a lot of plants collectively.

Ingredients

• 2 Carrots, grated

• 1/2 Cabbage, grated

• 1 Capsicum, cut in a thin slice

• 1 Raw Mango, cut in this slice

• 1/2 teaspoon Turmeric powder.

• One teaspoon Jaggery powder

• One teaspoon Lemon juice

• Salt, to taste

Ingredients for Seasoning

• 1 tsp Cold pressed oil

• 1-2 tsp Mustard seeds

• A Pinch of Asafoetida

• 3-4 Curry Leaves

• 3 Green Chillies, cut in the thin slices.

Method

• Take a pan, pour one teaspoon cold pressed oil. Add mustard seeds, curry leaves and green chillies with the addition of asafoetida and let it cook for a minute.

• Add Carrots, cabbages, capsicum, raw Mango and stir fry, keep it fresh do not over-cook.

• Mix turmeric, jaggery powder and salt. Cook for 5 -10 minutes.

• Squeeze lemon juice in the end.

Enjoy, the healthy salad with your meal.
