A lot of Italian dishes call for Parmesan cheese to be sprinkled on top. We have a tried and tested vegan, dairy-free no-cook version of Parmesan, made with cashewnuts.

Ingredients

  • Cashew nuts: ½ cup
  • Garlic: 2 cloves
  • Rock Salt: ¾ tsp

Method

  • Place all the ingredients for the parmesan in a mixie and pulse for short durations, taking care to get a coarse powder. Please note excessive blending will result in a lump.
  • Store in an airtight container. It can be stored for many weeks in a refrigerator.

Eating Guide:

  • Food group: Nuts
  • Nuts are wholefoods high on nutritional content. They are a great source of proteins and healthy, natural fats! A must add to your family’s diet!
  • They can be easily combined with vegetables.
