- 50 grams almonds (1/2 dry & 1/2 soaked)
- 15 cashews (soaked)
- 15 Pistachios (finely chopped)
- 2 tbsp chia seeds (optional)
- 4-5 dates (soaked)
- 1-2 tsp any plant-based milk
Method
- Soak the figs, dates, almonds & cashews separately in lukewarm water for 4-5 hours. Remove the excess water after 4 hours.
- Then make a paste of soaked figs & dates & cook it till it is free from water content. This has to be done on a low to medium flame for almost 15 minutes. Switch off the flame & let it cool down. After that grind them to make a smooth paste
- Dry roast unsoaked almonds & chia seeds together for 10 minutes. Switch off the flame & let it cool down. After that grind them to make fine powder
- Now, mix the dry ingredients - almonds & chia seeds powder & wet ingredients - figs & dates paste & knead them softly to make a dough. This is your first dough
- Grind the soaked cashews, soaked & peeled almonds together to make a kind of dough. If required you may add about a tsp of nay plant-based milk to grind. This is your second dough
- Using a rolling pin, roll out the cashew-almonds dough like a roti, giving it an oval shape
- Put the chopped pistachios like a parantha stuffing on the rolled out dough
- Now start rolling the stuffed dough into a cylindrical shape
- Roll out a chapati from the first dough (prepared in step no. 4) & place the cashew-almond pistachio stuffed roll on it
- Finally, roll over the second dough above the Roll and pack tightly in a foil.
