It's power pack salad recipe. The combo of veggies are good on stomach and for digestion .
For Coconut Peanut dressing
1. Peanut - 100 grams
2. Coconut- 100 grams
3. Garlic - 4 medium
4. Red chilly - 5
5. Salt to taste
6. Cashew - 10 ( soaked for 1 hour) (optional)
Coconut Peanut Dressing
1. In a mixie, place all the ingredients given under 'for dressing'.
2. Grind well to get a sauce-like consistency, you can add little water, if required (do not add too much water, consistency should be like a sauce)
3. Keep it aside
ASSEMBLING
1. Assemble the veggies individually one over the other on top of each other like a tower using a bowl ( as a mold) .
Tip: example - take grated carrot in a bowl ( flat bowl round bowl) press it so that it forms like a dense pack (to form the shape) . And then reverse it and tap on the top of the bowl, so that it follows the shape of the bowl . Repeat the same for the next grated veggie.
2. Spread capsicum on the sides of the tower .
3. Pour the sauce over the top.
4. Salad is ready.
5. You can cut like a cake and serve individually or mix all together and serve.
