Puran Poli is a common festive dish, made in different ways across the country. It is commonly made using maida, dairy and refined sugar. Here's a healthier version for you to create puran poli this festive season using jowar. It is also dairy-free.

Ingredients

For Jowar roti for Puran Poli

  • Sorghum Flour / Jowar Atta: 1 cup
  • Groundnuts: 1/2 cup
  • Besan 1/2 cupr
  • Flaxseed Powder: 1/4 cup
  • Turmeric Powder: 1/2 tsp
  • Water as required

For Puran Poli Stuffing

  • Bengal Gram Dal: 1 cup, soaked
  • Date Syrup: 1 cup
  • Cardamom Powder: 1/4 tsp
  • Water:4 cup

Method

To make Puran Poli Stuffing

  • Soak bengal gram for 1 hour.
  • Once soaked, strain the water. Add some fresh water and cook soaked bengal gram dal until it becomes soft.
  • Once cooked, strain the water.
  • Take the cooked bengal gram dal in a blender jar along with date syrup and cardamom powder. Blend together.
  • Puran Poli Stuffing is ready. Keep it aside.

Jowar Roti Dough for Puran Poli

  • Take 1 cup raw groundnuts and blend into a smooth peanut butter.
  • Put 1.5 cup water to boil. When it starts boiling, add 1 cup jowar flour, mix well, switch off the stove.
  • To the above, mix besan and peanut butter, turmeric powder, flaxseed powder. Knead well to make a smooth dough. The dough should feel slightly oily.
  • Pls note, you should be able to make a ball without any breaks. In case it breaks, add a little water and knead again. If it is too sticky, add some flour.

Preparing Jowar Puran Poli

  • Dust some flour on your hands and the kitchen counter. Take a ball of dough (small size) and flatten it between your palms.
  • Put the flattened ball on the dusted counter. Roll it with a chapati roller into a small roti or bread.
  • Now, take 1-2 tsp of stuffing and place it at the centre of the jowar roti.
  • Cover the stuffing with the flattened roti, press it well so that stuffing is at the centre and doesn't come out (just like stuffing a parantha).
  • Next, roll the stuffed ball, using dry flour. Keep rolling to form a thin roti.
  • Heat an iron tava. Should be heated well.
  • If required, grease the tava with a drop of oil and then clean it up. This needs to be done only for the first puran poli, to season the tava.
  • Once the tava is seasoned and ready, place the roti on the tava and immediately spread some water on the roti - the way oil is generally smeared on paranthas. Do not put too much water.
  • Flip over the roti just when the water dries up. Let it cook on the other side. Once done, turn it over once more. Ensure both sides are cooked well.
  • Once cooked, let it cool down completely.
  • Serve fresh!
