Instant Coconut Milk - great substitute to dairy milk

Have you been looking out for a suitable replacement for dairy milk? This instant recipe might be the answer to your search!

Coconut milk comes from the white flesh of mature brown coconuts. It is full of vitamins and minerals and is much lighter on our digestive system.

Giving up dairy is one of the challenges many of us face while transitioning to nature centric way of living. Especially, in households with kids, it is bothersome to think of losing out on the nutrition we have been relying on milk for! Try coconut milk in place of your regular milk.

Ingredients
  • Coconut -½
  • Water-1 Glass
  • Cardamom: to taste

You will also need :

  • Sieve or nut milk bag

 

Method
  • Take the ½ portion of coconut and scrape the tender kernel till you can only see the brown hard shell.
  • If you don’t have a coconut scraper cut the nut into pieces and grind it thoroughly in a mixer.
  • Put the coconut pieces in your blender with ½ glass water and grind into chutney like paste along with your flavoring (cardamom).
  • Now pour this mixture onto a soup sieve and with the remaining half glass of water.
  • Extract the milk by pressing down firmly the coconut mix with a spoon.
  • Add more water if required until your coconut mix in the sieve is dry.

Your fresh coconut milk is ready to drink. Yummy!!
