Millet rice is a good option to add diversity to the grains you eat. Mostly we end up eating just wheat and rice. But when nature has given so much choice, why not add some spice in life!!
Millets are rich in fibre. This recipe is oil free and the veggies are largely raw and give a good crunch. You can have this alone or with a soup or curry. You can also serve this as a salad in parties. If you are ok to eat raw veggies, you can reduce the quantity of millets and increase the veggies.
Lemon juice - of half a lemon
Rock salt and black pepper - as per taste
Millet rice - half cup
Steamed corn - 3-4 tbsp
Finely chopped veggies - I used tomato, cucumber and green amaranth (chaulai). You can also add capsicum and red & yellow bell peppers.
Water to cook rice - 3/4 cup
Wash millet rice thoroughly and soak for 10 minutes. Cook in a pot after that.
Once the rice is ready, add in all the other ingredients mentioned above. Except corn which was steamed, other veggies are raw.
Mix well. Adjust salt or pepper or lemon based on your taste buds. Enjoy!
