Tapioca is a root vegetable. It consists of almost pure carbs and contains very little protein, fiber or nutrients. Tapioca has become popular recently as a gluten-free alternative to wheat and other grains. It is a popular root vegetable in Coastal Indian States, Africa, South America and some Pacific Islands.

Tapioca botanically known as Manihot esculenta and has many names, including cassava, bitter-cassava, "Sagudana" (literally, Sagu drops)--with the local variation of "Sabudana"--and "kappa". TheTapioca Pearls are known as "Sabudana" in Marathi.

Nutrutional Facts

It contains only minor amounts of protein, fat and fiber. Other nutrients which are present in minor quantities.

The health benefits of tapioca

  • Enriches red blood cells. Tapioca is fortified with iron and copper, which are both essential for blood health.
  • Helps and keeps digestion in check. Good digestive fibre is present in abundance in tapioca, which keeps stomach and digestion problems away.

  • Helps in eliminating trans fats and sodium.

Ingredients

Red Rice – 1 cup
Tapioca – 2 cup peeled and chopped
Toor Dal / Arahar Dal– 1/4 cup
Green Chilli – 4-5
Asafoetida / Hing / Kaya Podi – 1/2 tsp
Black Salt to taste

Method

  • Take red rice and dal in a bowl and wash it well. Now soak it in clean water for over night for say 12- 13 hours.
  • Drain it and add it to a blender, add in chopped tapioca in it along with green chilies, asafoetida and black salt. Make it into a smooth batter.
  • Transfer this batter to a bowl.
  • Heat a tawa on medium heat. Drizzle oil all around the sides of tawato avoid sticking of the batter when spread. You may take a spoonful of batter and make it into a dosa. Cook for a min till it is lightly golden in colour, flip over and cook for another min.
  • Now remove from tawa and best serve with coconut or coriander chutney.
