A simple way to add raw veggies into your diet!
1. Bell pepper - 2 full pieces
2. Avocado ripe - 2
3. Tomato (finely chopped) - 2
4. Onion (finely chopped)- 1
5 Finely chopped garlic - 5 pieces
6. Corn (Indian) - 5 tbsp (boiled/steamed)
7. Mushroom - 7 pieces
8. Spring onion chopped- 3tbsp
9. Salt - as per taste
10. Pepper - as per taste
11. Methi leaves chopped finely - 2 tbsp
12. Broccoli (blanched, chopped into small pieces) - 2 tbsp
1. In a Kadai, add finely chopped mushroom and cook till water comes out and dries (without oil ) and keep it aside.
2. Cut capsicum into 2 and deseed.
3.Then in an oven toast the capsicum (outer skin facing up) at 180 deg for 15 to 20 min ( you will see the edges brown and skin with wrinkles on it ) . Take it out and keep it separately.
4. Guacamole filling: In a bowl smash the flesh of the avocado and to it put chopped onion, garlic, tomato, methi leaves, spring onion, corn, sauteed mushroom, blanched broccoli, salt and pepper. Mix properly
5. Assembling: On a plate place the oven-toasted bell pepper-like a boat , then fill the guacamole filling and garnish with methi seeds.
Note - You can skip mushroom as per choice
