Easy bell pepper dip

Oil free very quick lip smacking dip.

Ingredients

Red bell pepper - 2
Cashews (Soaked or roasted ) - 8 to 10
Lemon juice of 1/2 a lemon
Rock salt to taste
Dried Oregano - 1 tsp 【 optional 】

Method

  1.  Chop red bell pepper in small pieces.
  2. Heat a clay pot. 
  3. Once heated, add red bell pepper and dry roast for 5 minutes.
  4. Add soaked or roasted cashews to it and mix well. 
  5. As there isn't any oil used, you will see smoke coming by now in the clay pot. Cover the pot partially now and turn off the flame. **Covering the pot partially gives a smoky flavor to the bell peppers.
  6. Allow the mixture to cool and add to the blender.
  7. Also add in the blender, lemon juice, salt as per taste and dried, crushed oregano (optional).
  8. Blend well. 
  9. The simple yet delicious dip is ready. Serve it with kebabs :p
