It's delightful to discover the ample variety we have in nature when it comes to grains - a major ingredient of our daily food intake! Millets for one is a wonderful option! Whether you choose to be gluten-free or simply want to incorporate the high nutritional content in your diet, Sama rice is a great option.

Try making the much-loved sama rice idli recipe, this time using sama rice paired with urad dal!

Wellcure Soaking tip:When in a hurry do the following:

Soak the Urad dal and Sama rice in morning. In evening just before sleeping, grind the two. Mix and keep in a patila with cover (utensil). Let it ferment. Idli batter is ready to cook in the morning.

Ingredients

  • Sama Rice: 3 cups
  • Urad Dal: 1 cup
  • Fenugreek seeds (Methi): 1 tbsp

No, we do not need the regular rice. The sama rice idlis come out soft too! You may add some poha in the end to get crispy dosas.

Method

Preparing the batter:

  • Wash sama rice and urad dal well at least 3-4 times.
  • Soak the urad dal and rice separately for 5-6 hours (preferable warm water).
  • Grind them one after the other along with methi seeds using water.
  • Make a thick paste.
  • Mix both batters well. Cover with a lid and allow it to ferment for 6 hours minimum.
  • In summers, it will take lesser time to ferment.

KNOW MORE

Making the idl:

  • Add some salt after it is fermented.
  • Add some water, though keep it thick.
  • Take idli moulds. Grease them with cold pressed coconut oil (or choice of your oil).
  • Pour the batter onto the moulds.
  • Steam in a pressure cooker (without the pressure) or in Idli cooker for 10-12 minutes.
  • Take out when done.
  • Serve hot with green and red chutneys.

Eating guide

  • Food group: Legumes & Millets
  • Millets (like sama rice) are gluten-free, rich in fibre and high on nutritional value. They are a good option to add variety to your meals or when you want to go grain free
  • Legumes are natural foods, which provide the much-needed material for growth and repair.
  • You can use sama idli batter to make chillas, dhoklas or even a homemade pizza base! See the recipe here
