In the south, ragi ambli is a drink that every villager will grow up drinking. It’s basically used as a morning meal. It’s usually made with sprouted ragi flour, jaggery and tamarind juice. We are familiar with it too. I have tried to recreate the sweetness and tanginess in that drink in this cookie. There is no soda and powder making this a healthier cookie.
1 cup sprouted ragi flour
1/2 cup grated dry coconut
1/2 cup gluten free oats ( I used tru elements)
3/4 cup jaggery powder
1.5 tbsp lemon juice
1 tbsp cardamom powder
1 tsp nutmeg powder
Water to bind
1) Roast the oats slightly
2) Combine all the ingredients with enough water to make and retain its shape
3) Bake at 180c for 25-30mins
