We all love potato in all shapes and forms. But, there aren't considered the most healthy. We beg to different. Prepare this quick and healthy potato and leek soup and enjoy. 

Ingredients

  • 1 potato
  • 1 leek stalk
  • a few celery sprigs
  • 1 carrot
  • 50 gm pumpkin
  • vegetable stock
  • salt to taste

Method

  • Simmer potato, leek, celery, pumpkin and carrot in the vegetable stock until tender.
  • Blend until smooth.
  • Add salt to taste, and serve.
