Q&A

I’ve been reading natural foods articles, some excellent health journeys and recipes. Frankly I was struggling with same old no milk-no calcium and no animal based diet-no protein. Finally came across the two articles relating to these and makes a lot of sense. But still struggling where to start with? Any tips for slowly changing the habits? I had stopped drinking milk few months back but it’s hard to give up yogurt, cheese etc. Is there a step by step transition or a diet chart that might

Hello there! Remember its a step by step journey. In my case I struggled for the same. At one point of time I was having 2 glasses of milk daily! If I was hungry, but busy, milk would be an easy thing to just gulp down. But once I understood its close association with all lifestyle diseases (esp diabetes and cancer), how today's milk is actually being produced , and that we are indeed the only species drinking milk way into adulthood, I made the switch.

Now to your question of making the switch step by step, here is how I dealt with it:

  • It was easy to give up the milk, as the impact on my health was immediate
  • I was not much ofa paneer eater in any case, but enjoyed the occassional palak paneer and panner tikka! Over the years, at times I still eat it. However the focus has been more on addition vs. deletion / depriving myself.
  • So instead of palak paneer, a lot of times we do palak corn, palak gobhi, palak aaloo varieties.
  • At parties, I still dig into paneer tikkas, knowing that next day I will balance it out :)
  • Cashew cream is a great addition - its whole nuts, body absorbs it well, and with a wholesome diet which includes fruits and veggies, weight is also not a challenge. It just goes wonderfully well as a dairy replacement in all your curries, daal makhani, soups and even as a topping on home made pizzas. Check out in recipe section cashew based dips
  • Cheese - well its a lot of salt and additives/ preservatives & a fibreless food. If you like it, satiate your mind by having it once in a while. As you progress on your journey, you will eat with increasing awareness, and reach a point, where you wont crave it any more
  • In you weekly meals add some cheat meals - food which indulge your mind. So occassional pizza, paneer dishes are fine, balance it with lots of raw fresh foods and home made juices next day - your body will work easily to eliminate the harmful impact
  • Yes, as advocated by everyone Peanut curd is a saviour! It will help reduce family conflict too. One week make usual dairy Kadhi ...other week try peanut curd based kadhi. Slowly every one will switch over (or atealst eat what you offer at the table!)
  • It wil take some time to get into the routine of making peanut based curd, but I was amazed how one cannot at tell the difference in most dishes

All the best!

Hi. It will be worthwhile for you to attend cooking classes on dairy alternatives. Not sure you are in which city, but check Sharan's website, they do many such classes in various cities.

Also recently a book was released called RAW RASOI EVERYDAY MILKS, by Rupinder Kaur. It's available on Amazon. I haven't seen it yet, but just sharing in case you find it useful.

One step at a time dear. Milk accomplished, work on curd next. Try making nut based curds, like peanut curd. Everything you do with curd, u’ll be able to do with peanut curd too. Eating it plain, or make lassi or raaita or even kadhee!! It will surely taste a bit different, but quite ok. No compromise on taste.

I made kadi with coconut as well as soya yoghurt, turned out pretty ok, if you spice it well, it will taste perfect. Making dairy-free yoghurt at home is also possible.

First of all excellent that you gave up on milk. You have taken your health up a notch just with this change. Milk has casemorphins which is naturally in it so that a calf wants to have its mother's milk. In fact, all animal milks have. Now cheese is a concentrated form of milk ..in the ratio 10:1. So you can imagine how addictive it is. Cheese is high in sodium and fat which makes a great combo for addiction.

Yogurt is something we have been habituated to.. with parathas or as curd rice. Both are comfort foods.

I would suggest two steps

- Learn about the ethical angle associated with dairy - the harm it causes animals, the fear and the pain they go through just for our taste buds

- Learn to make delicious plant based curd and cheese recipes. Wellcure.com has many such recipes. I would also suggest

http://ofdonkeysanddhokla.com/ to learn how to make such recipes at home.

All the best!

First thing is to understand what is milk? What's the plan of Nature ?

Milk is a transitory food for infant till he is capable of having his food.

Except human no other species consume milk after infant stage and not of any other species.

Coming to alternative way:

NUTS - Consume nuts it satisfy the conditioning of milk. You can have Nut milk. You can have them sweet ( natural sweetener like jaggery or raw sugar) or buttermilk ( with mustard seed and curry leaves just make dry tadka of spices and add to Nut milk)

Search recepie section for more ideas

Start with Peanut- Rice curd. Soak peanut and rice overnight ( 2:1 ratio). Throw the excess water.

Grind them seperately with water. Sieve if you want a thinner texture.

Then start heating peanut milk and slowly add rice milk. Keep stirring to avoid lumps.

No need to boil just heat the way you used to heat milk.

Then add starter from existing curd or stem part of green chilli.

Taste will be different but after 2-3 times it will become better.

Try to consume like Raita.

The best one place to know about milk is NOMILK.COM

You will get articles, study papers, do's and dont's about milk.

Conditioning the mind is the most important. The beauty is that one doesn't have to learn about milk as most of it is unlearning about milk. Go slow and steady. Firstly remove the milk products that you consume occasionally and gradually eliminate them. It's difficult but possible. You will garner sturdy will power by learning more about milk. All the very Best.
