If nothing, simply compost… just sprinkle over plant beds.

You can add or sprinkle over salads.  Alternately, dry roast in a wok or oven and add to salads for a crunchy feel.

You can also add this to rice flour and make puttu which is a Kerala dish which can be had with channa, it can make a good breakfast.

Congratulations for having discovered the power of coconut and having Incorporated it in your diet. I am answering your query after reading all the answers. All of the suggestions are very practical and simple.

My recommendation is bit different and for spiritual reasons. What ever we do consciously is also recorded in our sub conscious memory. You are trying to use the complete coconut without wasting (a very good thought indeed), but unconsciously you are also recording this for your toxins in your body and toxin elimination process happens in our sub-conscious state. Though subtle at a cellular level but huge for the body as whole.

When we develop a habit of giving selflessly, our cells do so sub consciously. We are witness to such people in our society.

PS: My comment may please be viewed at spiritual level only.

You can use it as a body scrub in your bath.
