Should I be using ghee for tadka instead of oil?

Contrary to popular belief, doing a ghee tadka may not be the best thing. There are two facts about ghee:

It’s a processed food not whole food, neither raw and that its derived from dairy (so quality is always doubtful, especially these days)

Most of our tadkas can be done without oil or ghee, but ofcourse our houses usually will have other people involved in kitchen (maids / parents etc.) So getting everybody on board may be tough!

So if you must use, then use cold pressed oils – a wide variety – keep changing every 2 months.

If you must use ghee (which may not be needed for true health), then add it on top.

Our bodies are designed to absorb nutrition from foods in whole and natural form the best. This is because nature delivers the ‘nutrients’ in a complementary bouquet rather than in singular forms of only one nutrient i.e either only fats, or proteins, vitamin A, B … Zeee, or omega-this, omega-that!  

Oils - one must know why we are eating it, for nutrition or for taste? To fulfil nutritional needs (in this case ‘healthy fats’), its best to consume natural options such as coconut, avocado, sesame, walnuts, and all other types of nuts & seeds.

For kids, you could powdered nuts, and mix in meals or give as home-made nutmilks & nut butters weekly. Idea is to add variety instead of being dependent on only one source.

Tadka whether in oil or ghee, it’s an additional step we have got accustomed to only for taste or time-convenience (it sure cooks faster doesn’t it!).  In fact, the refined oils & processed ghee may be overtaxing your digestive system rather than adding any real health benefits.

If you must add your ghee, best is to add some in your meal from top, rather than frying your veggies / tadka in it.  Remember, how in South India, the cooking medium prevalent was coconut oil, while ghee was generally added on top for taste?!
