Kids sometimes enjoy foods because they look attractive and we have to bank on that to get healthy foods into their lifestyle. While we parents have been enjoying our delicious raw and creative lunch, kids got really attracted to the looks of it and I attempted to make this their school lunch and not only my kids, their friends also could not believe they were saying that salads can be so tasty. 1 zucchini
1/4 cabbage
1 tomato
Chopped mint and coriander
Chopped onions / spring onions
Any other chopped raw vegetable
Dressing
Dressing is quite interesting. In south India we have something called hasi gojju ( raw tangy mix) .So I decided to recreate that.
Raw tamarind paste - 1/2 spoon thick or thin just enough to give a tangy flavour
3 soft dates
Cumin powder- 1/2 tsp
Coriander powder 1/2 tsp
Raw tomato1 big
Fenugreek powder - 1/8 tsp
Mustard powder 1/4 tsp
Sesame seeds 2 spoons
Pink Salt for taste or one can add chopped spinach to avoid the salt
So this created a tangy South Indian rasam taste which is unbelievably tasty.
Chop vegetables of your choice or given in this recipe and keep aside
Grind the ingredients for the dressing.
To send this for kids lunch, pack them separately so that they can just use it while having lunch at school. Avoid mixing the dressing for any raw lunch in advance because the vegetables can release their water and make the dressing mix watery.
This is an interesting way to introduce raw to kids in the form of zoodles. Any taste can be created because zucchini is tasteless and can blend with any other vegetable or dressing. Investing in a good spiralizer goes a long way. Attached is a link from amazon
