Legumes like chickpeas are wholesome and a wondeful source of protiens as well as fibres. Chikpeas are versatile and are used in varied recipes like curries, salads, hummus etc. Here is a simple recipe of making chickpea cutlet. And yes, these aredone oilfree, making them all the more healthy!
For Cutlets -
2-3 cups chickpeas (soaked overnight)
2 chopped onions
Mint
Coriander
Amchoor powder 1 tsp
Dhaniya powder 1 tsp
Cumin powder 1 tsp
Chili or chilli powder as per taste
Salt as per taste
For Pudina Chutney
Grated coconut
Pudina
Green chilli
Coriander
Tamarind juice
Onion piece
Cook chickpea just enough to retain its shape.
Grind the chickpea in a mixie or mash finely.
Fry onions without oil till they are translucent.
Mix everything and make flat patties. Add the spices if your want more.
Dry roast on a heated tawa on both sides.
Serve with a chutney of your choice. Spicy pudina chutney is great with this.
