I’m always on the lookout to add variety to the veggies I eat in raw form. Here’s the latest addition - chaulai / green amaranth. Do you know it has more calcium than cow's milk? Every 100 gms of cow's milk has 125 mg of calcium, the corresponding number for chaulai is 159 mg!
Kundroo has a slightly sour taste and can easily be eaten in asalad. You can experiment with different salad dressings to suit your taste palette. I mostly end up using lemon, honey, salt and pepper as it gets ready in a jiffy.
Handful of chaulai leaves finely chopped
3-4 kundroos cut into rounds
Steamed corn - half bowl
Grated raw mango - one fourth
Black sesame seeds - 1 tbsp
For dressing -
Lemon juice - half or less
Honey - 1 tbsp
Rock salt - as per taste
Black pepper - 1/4th tsp
Change the quantity of ingredients based on your liking.
Put all ingredients in a bowl.
Prepare dressing separately.
Add dressing to salad and mix thoroughly.
Salad is ready!!!
If you want to add some crunch, add roasted peanuts. Or if you are not averse to using chilli, add red chilli flakes.

Thanks Akka .. it looked more like a cucumber which was called a kakdi as far as I knew and this kundroo was a new word. Gotcha

I don’t know what it’s called in English. The green cucumber like veggie you see in pic is kundroo. But it’s not like cucumber, it’s really tiny. Google it for pics.
