This is the delicious recipe of raw vegetable Palav. It is absolutely free of oil or any processed ingredients.
Spices for grinding
Raita
- Raw vegetable pulao is made with raw cauliflower rice here. Clean the cauliflower by adding the white florets in hot water and turmeric for 5 mins to remove any bugs or eggs. Drain and discard the water.
- Grate the florets
- To the raw grated cauliflower florets, add chopped raw capsicum, onion/spring onions, grated carrots or any vegetable of your choice and keep aside.
-In a mixer, Grind a mix of mint leaves, fresh coconut, cinnamon, clove, cardamom, poppy seeds, lime juice, chilli ( optional ) and add this to the mix of cauliflower that was kept aside.
-Add salt just before it’s ready to be consumed as salt can release water from the vegetables.
- Add grated coconut as a garnish.
-Pulav is ready
- To prepare the raitha for pulav, do the following
-Add paste of tender coconut meat, lime and raw curd is ready
- To this raitha, Add chopped tomatoes, onions and cucumber.
If tender coconut meat is not available, skip the curd and enjoy the pulav with chopped veggies.
Optionally blend soaked cashewswith lime to make the curd. Add chopped veggies to prepare the raitha
