Jhinge Aloo Posto – Potato and Ridge Gourd Cooked in Poppy Seed Paste - Dairy-Free!

Oilfree Rice vermicelli Upma (Shavige Bhath)
Rice vermicelli are noodles made from rice. The principal ingredients are rice flour and water. Traditionally rice noodles are made at home from scratch and later spiced up. But it calls for a lot of procedure and time. But nothing can beat its taste. I will post that as a separate recipe. When time is short, we can buy instant rice noodles and make this recipe. This is an oil-free and gluten-free vermicelli. Rice vermicelli upma can be flavoured many ways with coconut, tamarind, tomato or enjoy like a pulav. We can also make a kheer from this vermicelli. For today the chosen one is tangy lemon flavoured rice vermicelli. Addition of veggies like carrot, potato, beans, capsicum, peas etc makes it wholesome and more healthy. It's a great option for school lunch box.

Instant Jackfruit idli
This is a famous cuisine of South Canara ( Malnad region of Karnataka). Jackfruit is a seasonal fruit in summer and is grown in abundance at this time. There are plenty of sweet dishes that get made with jackfruit and idly is one of them. It's usually made with rice rawa, jaggery and savoured with a pickle. Raita With A Difference
Steam the grated bottle gourd for 3 minutes. Mix together the peanut curd, steamed gourd, chopped onions and grated coconut. The consistency should be like a thick batter but easy flowing. If it is too thick, add 1- 2 tsp of water. Heat a pan and roast the mustard seeds. When the seeds splutter, add ginger and green chilli and ‘fry' for 1 minute. Then add the curry leaves and coriander leaves. Stir quickly and remove from the fire. Add this to the curd – gourd mixture.
