Nippattu (Rice crackers) - oil-free!
Nippattu is a spicy deep-fried snack from Karnataka which is a perfect tea time snack. it is typically prepared during festival seasons like, deepavali, ganesh chaturthi and even krishna janmashtami. This is made with rice flour. I have used an autolysed rice flour dough to mimic the exact taste of the fried crackers. It's actually better than its deep-fried counterpart because this remains crispy even after a day whereas the fried ones become soft.
Pumpkin Kootu (Pumpkin cooked in simple coconut gravy) - Dairy-Free! Oil-Free!
Kootu is a Tamil word means "add" i.e. vegetable added with lentils which form the dish, made of vegetable and lentils and are semi-solid in consistency. Usually a combination of vegetables with lentils and a coconut paste, it forms a part of everyday cooking. This pumpkin kootu is made without lentils but with a generous amount of ground coconut. The natural sweetness of the vegetables is countered with the sharpness of green chillies. Makes a wholesome meal with steamed rice or millets.

Moor Kootan (Kerala Kadhi) - oil-free! Dairy-free!
In a vessel, add the chopped ash gourd and 1.5 cups of water.Add turmeric and salt Boil till ash gourd is cooked, but still firm. Grind coconut and green chilies to a paste (use a little curd rather than water to grind). Add the ground paste to the cooked ash gourd.Mix well. Grind the mango piece and add to the remaining curd (or add the amchur powder).Whisk well to get rid of any lumps. Add to the cooked ash gourd. Check for consistency and salt. Simmer till froth begins to appear (do not boil).Turn flame off. Roast mustard seeds, red chili and fenugreek seeds and add to the cooked dish. Garnish with curry leaves. Serve with red, brown, black rice or millets. Serve papad as an accompaniment along with other vegetable main dishes.Enjoy. The Upma Kozhukattai or pidi kozhukattai is one of the most popular snack items in a Tamil Brahmin household. As the name goes ‘Pidi' means fist and the dumplings are shaped by pressing together in the fist, just like Gujarathi muthiyas. These are usually steamed rice grit dumplings. They taste great with sambar and chutney. In many households they are served dunked in spicy hot rasam. The same recipe can be enjoyed by replacing rice with millets. You can use your choice of millets. I am using Sama/little millet.

Who does not love crunchy potato chips? I am sure anyone can relish them at any time of the day. However, most of us refrain from investing in these unhealthy options because of the toxins they bring along into the body such as refined oils that are old and has been used over and over again for frying or it can be branded chips which has a whole new set of ingredients in addition to the oil,most of which we hardly know of. This baked chips is oil-free and has nothing but unrefined salt in it. Its a relatively healthier option when compared to the store-bought ones.

It is said to have originated in the Mysore Palace. It is made with a special spice mix. The rice in this dish can easily be replaced by millets of your choice. Please note that it is of the consistency of a porridge.

These baked masala vadas are healthy and oilfree. Perfect party snack and crispy for a rainy evening. It has two major steps. We steam it and then bake it. One can enjoy the steamed ones as is or bake it too. It's called nucchina unde in Karnataka when we consume just the steamed ones. The crispy version can be enjoyed after it's baked.
Yogurt free Kadhi - oil-free!
Prepare a slurry of the besan in 3 cups of water. I If the coconut milk is watery instead of thick, use less than 3 cups of water here. Roast the cumin seeds. When the cumin seeds begin to sputter, add large pieces of the green chillies, ginger paste and some curry leaves. To this seasoning add the besan slurry and salt. If you like your kadhi to be yellow, add a little turmeric powder as well. Heat this liquid mixture to a boil. Reduce the flame to low, add the coconut milk and simmer for just a minute (very important for the flame to be low and to heat the coconut milk for only a short duration, otherwise the coconut milk splits). Undhiyo (Mixed Vegetable Gujarati Dish) - Oil-free!
Wintertime and if you are in western parts of India, you can't miss the mention of Undhiyo/ Surti Undhiyo. It is a regional speciality of Surat. While living in Mumbai I used to buy it from stores that sold them as a Sunday special dish. After leaving Mumbai I was forced to make it myself. Conservative Gujaratis would be very particular about wanting the specific ingredients and vegetables to make this classic dish. With due apologies, I have tweaked it a bit to suit the local availability of ingredients. It comprises of vegetables that are available during the winter, muthia (dumplings/fritters made with fenugreek leaves and spiced chickpea flour, and either steamed or fried), potatoes, and purple yam, and sometimes plantain. These are spiced with a dry curry paste usually cooked with a lot of oil.
