Jeera Red Rice
Clean, wash and soak red rice in water for 30 minutes. Heat a pan. Add jeera seeds and let them splutter/pop. Add sliced onions and slit green chillies and sauté till onions are transparent. Add ginger-garlic paste and fry lightly. Add water (3 times the quantity of rice), salt and bring to boil. Put the rice in the pot of boiling water. Mix thoroughly and bring to boil. Reduce flame and cook until rice absorbs water. Add chopped coriander and mint. Seal tightly with a fitting lid and place pot on top of a thick tawa. (To ensure that rice is cooked well, do not place the pot directly on top of the flame/stove.) When steam comes out of the sides of the lid, the rice is done. Tri-Coloured Salad

Kathal (Jackfruit) Masala in Cashew Gravy - veg. Substitute for 'chicken' masala
Drain the water from the cashews. Wash them well. Pulse in a grinder with a little bit of water to form a thick smooth paste. Keep half the paste aside. Add salt and pepper to the other half, mix jackfruit pieces and cover. Leave aside for one hour to marinate. Take 3 tomatoes, 1 onion and blend them. Take 1/5 cups of water in a wok/kadhai. When it heats up, add the tomato-onion paste to it, bring it to boil and lower the flame. Keep cooking, ensuring it does not burn. This will take about 20 – 25 minutes. You will know it is done when the paste is thick, the bottom of the kadhai is shiny and the paste is not at all sticking to it. Steam the remaining tomato for 3 minutes and blend it. Add it to the cooked tomato onion gravy. Add the remaining cashew cream along with salt and pepper. Add water if required to make a thick gravy (same consistency as a tomato ketchup). Sai Bhaji
Heat a pot. Once it's hot, switch off the gas and add hing, turmeric, red chili and dry roast. Now add all the other ingredients (except lemon, tomato and the dal) along with 1.5 cups water and cook. Once the vegetables are well cooked and can almost be mashed add the dal and cook a little, more mashing and mixing everything in. Serve hot, garnished with lemon slices and chopped tomato. Lettuce Leaf Rolls

Chickpea Cookie Dough – Gluten-Free!
When I saw the videos of raw cookie dough recipes I saw most of them had oats, butter, eggs, and plain flour. I was tempted to create a similar recipe without the above. Thus was born this healthful version of cookie dough. Do give it a try.

Spicy Warm Salad
Lightly steam cauliflower, carrots, french beans. Chop the tomato, capsicum and thinly slice the mushrooms. For the dressing, soak the tamarind in hot water for 30 minutes and take out the pulp. Add the rest of the ingredients. Grind all the ingredients together with little water. Later add more water as per the consistency desired for the dressing. Green Rice
Wash and soak the whole brown rice for about 8-10 hours in 2 ½ cups water. Cook the rice. Make a chutney in the grinder with all the other ingredients except the onions. Brown the onions without oil. Cabbage Rolls
Peel off the cabbage leaves one by one, keeping them whole. Boil water in a large pot. Turn off the heat and dip the leaves in the water and leave them for a few minutes. Wash and grate the carrots and beets. Mix all these ingredients and add salt and ginger chilli paste to taste. Flatten the cabbage leaves and cut off any hard stems. Fragrant Brown Rice
Drain the water from soaked rice. In a pan mix saffron strings and sea salt in 2 cups of water. Add soaked rice to the pan and cover the pan. Cook rice on medium heat till the rice is fluffy.
