Punjabi Kadhi - dairy-free, oil-free!
Want to go off dairy, but can't resist some of your all-time-favourite dairy based dishes! Punjabi kadhi for instance! This recipe may help you find the solution to your dilemma. In this recipe regular, dairy curd is replaced by peanut curd making it dairy free. Also, oil which only adds on to the toxic and digestive overload of our body, is not required to prepare this tongue-tickling curry!
Steamed Cauliflower & French Beans - oil-free, dairy-free!

Raw Lentils Dhokla - Oil- Free! Cook - Free!
Dhokla is the mainstay of Gujarati cuisine. Any mention of Gujarati food is incomplete without Dhokla. I have heard from those who have attended raw food workshops, conducted by BV Chouhan Saheb, about the really yummy raw dhokla that was served there. I have attempted the same thing and would like to share it with you. Needless to say it's not going to be like the dhokla we are used to which usually has a raising agent like soda or Eno salts, refined semolina/ rawa and chickpeas flour. This is made with whole soaked lentils. It is definitely worth trying. Soaked lentils consumed raw are an excellent source of nutrition.
Eggplant Parmesan (Baked eggplant dish) - oil-free! Dairy-free!
Cut the eggplant into round slices, ½ inch thick. Cut each round in half. Sprinkle salt over the slices and leave for 5 minutes. When the eggplant softens, place the semi-circular slices (with the water that has been released) on a tava. Cover the eggplant and cook the slices until brown on both sides. Steam the potatoes. Slice into rounds slightly less than ½ inch thick. Method for the red sauce Sauté garlic until brown. Add the finely chopped onions and salt. Sauté for 2-3 minutes, then add the roughly chopped tomatoes. When cooked, blend vegetables into a smooth paste. Put the sauce back on to heat and cook for a few more minutes. Add salt, oregano, dried herbs to taste. Cook until the sauce thickens to a medium consistency. Method for the white sauce Blend the raw cashews, salt, peppercorns, lime juice and water. The cashews will make a thick, creamy fluffy texture. The texture should be smooth and not granular. A
Moussaka (baked eggplant dish) - dairy-free! Oil-free!
Thinly slice 3 of the eggplant and lightly roast in a pan or in the oven for 5 to 10 minutes. Set aside. Fry garlic, chopped onions until golden brown. Add the tomatoes cut in small cubes and cook until soft. Add the chopped eggplant, capsicum, zucchini and mushrooms. Add the salt, pepper, herbs and coconut milk. In a baking pan, line the bottom with a layer of the sliced eggplant followed by a layer of the cooked vegetables. Continue adding layers of eggplant slices followed by the cooked vegetables. Oil Free Moong Dal - add body-builder foods to your mealtimes!
A regular staple in Indian homes, doing dals oil free almost feels impossible. But it is possible, and in fact that's how our ancestors cooked mostly - without refined oil. We can only assure you taste wise there is no compromise, and health wise its so much better, and lighter for your body. Here the recipe soaks the daal for sometime, and cooks it in open (the traditional) way. Of Course this retains the nutritional profile of the legume (lentil) being cooked but if you in a hurry, use the usual pressure cooker. However, do give the traditional process a try… you may just end up using this way each time you cook, with a little bit of planning.
Oil-free Puliyogare Mix (Tamarind rice gravy)
The famous synonym for Iyengar is Puliyogare, the most popular rice dish served in temples of the south. This popular Puliyogare Gojju/hunase gojju recipe is from my mother-in-law. All credits to her and I have just made this oil-free. Puliyogare Gojju (means gravy in Kannada that is typically made of tamarind and jaggery) is what we need to for making the Puliyogare rice dish. Puliyogare Gojju can be prepared ahead of time and can be stored in the refrigerator for more than a month if we don't use any wet spoons. Gojju can also be used as side dish to gluten-free chapatti and roti. One can mix this with rice and sprinkle some coriander and it's ready to eat. Since this is a spicy dish, it's not a good idea to have this while detoxing and it's good to limit the consumption.
Oil Free Dal Tadka
Dal tadka and that too oil free! Flavour bhi health bhi.Yes, that's possible. Yet another favourite and staple item in all Indian households, done in simple oil free way. You can keep the process same, and do any daal of your liking. Watch the "Heal with Food" video by clicking the above picture to know more.The recipe here, soaks the daal overnight,which reduced the cook time to only 15-20 minutes next day, and that too without pressure cooker. This infact is a more healthful way to cook lentils, to ensure the nutrition is preserved. If you are in hurry do feel free to use pressure cooker, but do it the traditional way once, and you will realise its an easy switch to do.
Oil-free gongura chutney / pachadi ( Andhra style )
This is very popular dish in Andhra Pradesh. But the traditional one calls for a lot of oil. This is the exact recipe that my mom used to make with oil, but here I have customised this without oil. It's a very tasty recipe and being oil free can be used guiltfree too. This needs refrigeration and can be consumed in 3-4 days. It has no water, so it will stay for that time period.
Rasse Wala Aloo Curry Oil Free!
This is a much loved standard curry in Indian homes. But cooking it without oil? Yes thats possible, with no compromise on flavour! When we made this the first time, we realised the ample addition of lovely herbs and masalas just makes it so flavourful that no oil was missed at all! The easy trick to go oil free in most curry preps is: Steaming veggies (including potatoes) and making the masala the usual way without oil ofcourse!
