Resembling spinach in appearance, amaranth leaves come in a few varieties ranging from purple and red to green or gold in colour and are found in the foothills of the Himalayas to the coasts of south India. A few years back, the seeds of the plant had gained much popularity for their health benefiting properties because of which they were caped under the superfood segment. But tracing back history, amaranth seeds were the staple food of the Aztecs and have been used for centuries to make many dishes. In south India, sambar and chutney are some of the popular dishes made with amaranthus leaves. This is an oil-free, quick recipe that can be made without dals hence keeping it simple and healthy.
Oilfree South Indian tomato rasam (Karnataka style)
Simple, easy & quick recipe to make delicious rasam at home.Rasam means “juice” in Tamil and Telugu. In Kannada, it's called “Saaru”. It can mean any juice, but in South Indian cuisine, rasam is a thin soup made with tamarind, tomatoes and other spices like mustard, cumin ,pepper. This rasam powder and rasam are oil-free. Rasam is typically supposed to be a watery spicy and tangy dish and you will not see the consistency of a Sambar that is typically served with Idli. This is like a tasty vegetable broth.
Bajre ki Khichdi- Dairy free!
Bajra khichdi is a warming and nutritious khichdi made during winters. Its also a staple food in the regions of Rajasthan and Haryana. Gluten-free baked snack made of besan. Inspired by a traditional Egyptian spice mix with nuts and seeds called Dukkah. It is used as a sprinkle on top of soups and other dishes. I made my own version. It adds an extra crunch to every bite. This is a very versatile recipe where you can change the spices according to your taste and personal preference of spices and flavors.
Baked Spiral Potatoes with Vegan parmesan- Dairy-free, kid- friendly!
This is a very popular snack, Twist potatoes or tornado fries are popular street food in South Korea. It is usually deep-fried or batter fried. This peanut curd recipe deals with something most people attempting to go off dairyare struggling to give up or replace - curd. The best part about dairy alternatives for curd is that you can make curd out of so many different raw materials and each has its own flavour and taste that can be adapted to savoury and sweet needs. When you are starting off, always make them in small quantities because most often than not, they are not going to set as you want the first time. If you are using green chillies, wash the entire green chilli and carefully pluck out the stem. Do not wash the stem again. Store a small portion of this curd to set the subsequent curds as you would do with dairy milk. You can also freeze a portion to use it later.
