I tried out this millet pulao which turned so good! I had some boiled chickpeas that I added to this yummy vegetable pulao. Taste and health in every mouthful loaded with juicy steamed vegetables. This is what I call a real one-pot meal!

Puffed Poha In Jaggery Syrup/ Karthigai Pori – Dairy-Free!
Karthika Deepam is a festival of lights that is observed by Hindus of Tamil Nadu, Sri Lanka, and Kerala. It falls between mid-November to mid-December it occurs on the day when the moon is in conjunction with the constellation Karthigai (Pleiades) and is also related to Karthik Purnima. It is celebrated with lighting clay lamps around the house. This festival is also celebrated to commemorate the bonding between brothers and sisters in South India(analogous to Bhaiya-Dhuj and Raakhi). Sisters pray for the prosperity and success of their brothers and light lamps to mark the occasion. Like with all Indian festivals we have specific food offerings made on this occasion too. It is puffed rice(Nel Pori) and puffed poha (Aval Pori)coated in jaggery syrup and shaped into balls. Somewhat like our chikkis in a different shape.

Punjab is known for the variety of lentils that's cooked up there in many different ways. Usually loaded with ghee and butter. Many years ago I had the good fortune to learn how to make Dal Kabila from a chef hailing from Punjab, working with the ITC group of hotels. The unique flavours and texture of the dish is still fresh in my memory. Freshly hand pounded spices, fresh coriander leaves and simmered in tomato puree will make this a go to dish for you. It's the herbs and the fresh ingredients that actually impart the flavours to a dish and not the ghee or butter as is wrongly assumed.
Urad & Moong Dal Idlis- try this rice-free version!
When I saw this recipe shared on a social media forum, I couldn't wait to try it out. Idlis with just lentils!! Yes! It's possible and it's wonderful too. Excellent results! Protein rich! Idlis are steamed and made of fermented batter. Voted as a safe dish for anyone at anytime. They only got better with this recipe.
