Oilfree Amaranth leaves chutney
Saag, the Indian moniker for green leafy vegetables, forms an integral part of various regional cuisines in the country. Resembling spinach in appearance, amaranth leaves come in a few varieties ranging from purple and red to green or gold in colour and are found in the foothills of the Himalayas to the coasts of south India. A few years back, the seeds of the plant had gained much popularity for their health benefiting properties because of which they were caped under the superfood segment. But tracing back history, amaranth seeds were the staple food of the Aztecs and have been used for centuries to make many dishes. In south India, sambar and chutney are some of the popular dishes made with amaranthus leaves. This is an oil-free, quick recipe that can be made without dals hence keeping it simple and healthy.
Spiced Poha curd rice ( quick snack )
Curd poha or mosaru avalakki in Karnataka is relished as quick snack. It's typically made with dairy curd. This recipe uses a plant-based peanut curd instead. This is also an oil-free version making it a healthier option. Typically people use white poha while this recipe uses red rice poha. it's also used as a Prasad and offered to Lord Krishna during Krishna Janmashtami to celebrate the friendship of Krishna and Sudhama.

No Dairy Nutty Rabadi
Traditionally, Rabadi (or Rabri) is a milk-based recipe pretty popular in north India. It is made with milk, which is condensed in a wok and the malai which comes out is mixed back into it. Here we are doing a similar version, but with homemade coconut milk. Do note, this will taste different but yummy nevertheless! It's best to take coconut milk out in advance and set it in fridge, it will become creamier. You can even choose to just use the creamy extract of the coconut milk and leave the watery extract (to be used elsewhere in curries).
