Dairy-Free & Sugar-Free Kheer with Sama Rice
Millets are great replacements for our staple grains of rice & wheat. They lend a huge variety to our palate, are easier to digest, and fill our mental ‘need' for grains for a filling meal. Jowar Khichu – Gluten-Free! Oil-Free!
“Khichu” in Gujarati is actually a dough from which traditional papads are prepared. However, this dough alone is so delicious with raw groundnut oil that people eat it as a snack. Khichu can be prepared with different flours, rice, Jowar, Bajra or any other. It is a quick snack. I chanced upon this snack recipe while looking up for something oil-free and gluten-free, yet tasty, to make for my daughter and this was an instant hit. I have taken the liberty of marrying the Andhra Spice powder with the Gujarati Khichu and they lived happily ever after.
Millet Mulligatawny- National soup of India! Dairy-free!
Mulligatawny is a soup which originated from South Indian cuisine. It's almost forgotten that it was known as the national soup of India. The name originates from the Tamil words miḷagu (pepper), and taṇṇi (water). Due to its popularity in England during British India, it was one of the few items of India that found common mention in the literature of the period. There are many versions of this recipe. Most of the recipes use meat rice and lentils to make it a thick broth. Let's make a millet based dairy and meat free version to enjoy a flavorful soup.
Bajre ki Khichdi- Dairy free!
Bajra khichdi is a warming and nutritious khichdi made during winters. Its also a staple food in the regions of Rajasthan and Haryana. In this bajra khichdi haryana recipe, only bajra and moong dal is used along with a few spices. Bajra is the Hindi word for pearl millet. Everything is cooked in one pot, traditionally in clay pots. Since it is not so commonly made where I live, I tried out this recipe with the guidance and expertise of my dear friends Niti and Shikha. It is wholesome and filling and definitely fits the bill of being a soul food. You can enjoy this bajra khichdi with vegetables.
Modak - gluten free, refined sugar- free, dairy free! Ganapati Bappa Morya!
Ukdiche Modak in Marathi, Thengai Poornam Kozhakattai in Tamil, Kai Kadubu in Kannada, This is the traditional offering to Lord Ganesha for Ganesh Chaturthi in many parts of India. It is usually made with ghee to cook the coconut jaggery filling and rice flour casing. Sorghum Sankati (Jowar Balls) - gluten-free!
In our quest to find gluten-free, whole foods Jowar is an excellent alternative to rice and wheat. Andhra Pradesh has a popular dish called the Jonna Sankati or Jowar Sankati. It is usually a dumpling made of millet flour. Here we used broken Jowar/ Sorghum to prepare it. Wholesome, filling and healthy. It is very easy to make.
Sama Paal Kozhukattai/ Sama dumplings kheer - Dairy- free, Kheer!
Paal kozhukattai is a traditional dessert made of rice dumplings in a milk and coconut milk mixture sweetened with sugar. It comes from the Chettinad Cuisine of Tamilnadu. It can be enjoyed with millet flour, coconut milk and jaggery in place of sugar.
Samak Rice Sandwich - go grain-free!

Muthiyas are very popular in Gujarat. It derives its name from the gripping action on the dough to shape it. There are many ways to make it by varying the ingredients used in them and shaping them differently. Using greens, herbs and grated vegetables it is very flexible and lends itself to a myriad of ways to make it. One of the commonest ways is to use a combination of wheat flour and chickpeas flour. Here is a gluten-free version without oil. It makes for a great evening snack.
