Dhokla is the mainstay of Gujarati cuisine. Any mention of Gujarati food is incomplete without Dhokla. I have heard from those who have attended raw food workshops, conducted by BV Chouhan Saheb, about the really yummy raw dhokla that was served there. I have attempted the same thing and would like to share it with you. Needless to say it's not going to be like the dhokla we are used to which usually has a raising agent like soda or Eno salts, refined semolina/ rawa and chickpeas flour. This is made with whole soaked lentils. It is definitely worth trying. Soaked lentils consumed raw are an excellent source of nutrition.

Eggplant Parmesan (Baked eggplant dish) - oil-free! Dairy-free!
Cut the eggplant into round slices, ½ inch thick. Cut each round in half. Sprinkle salt over the slices and leave for 5 minutes. When the eggplant softens, place the semi-circular slices (with the water that has been released) on a tava. Cover the eggplant and cook the slices until brown on both sides. Steam the potatoes. Slice into rounds slightly less than ½ inch thick. Method for the red sauce Sauté garlic until brown. Add the finely chopped onions and salt. Sauté for 2-3 minutes, then add the roughly chopped tomatoes. When cooked, blend vegetables into a smooth paste. Put the sauce back on to heat and cook for a few more minutes. Add salt, oregano, dried herbs to taste. Cook until the sauce thickens to a medium consistency. Method for the white sauce Blend the raw cashews, salt, peppercorns, lime juice and water. The cashews will make a thick, creamy fluffy texture. The texture should be smooth and not granular. A
Moussaka (baked eggplant dish) - dairy-free! Oil-free!
Thinly slice 3 of the eggplant and lightly roast in a pan or in the oven for 5 to 10 minutes. Set aside. Fry garlic, chopped onions until golden brown. Add the tomatoes cut in small cubes and cook until soft. Add the chopped eggplant, capsicum, zucchini and mushrooms. Add the salt, pepper, herbs and coconut milk. In a baking pan, line the bottom with a layer of the sliced eggplant followed by a layer of the cooked vegetables. Continue adding layers of eggplant slices followed by the cooked vegetables. Puffed Poha In Jaggery Syrup/ Karthigai Pori – Dairy-Free!
Karthika Deepam is a festival of lights that is observed by Hindus of Tamil Nadu, Sri Lanka, and Kerala. It falls between mid-November to mid-December it occurs on the day when the moon is in conjunction with the constellation Karthigai (Pleiades) and is also related to Karthik Purnima. It is celebrated with lighting clay lamps around the house. This festival is also celebrated to commemorate the bonding between brothers and sisters in South India(analogous to Bhaiya-Dhuj and Raakhi). Sisters pray for the prosperity and success of their brothers and light lamps to mark the occasion. Like with all Indian festivals we have specific food offerings made on this occasion too. It is puffed rice(Nel Pori) and puffed poha (Aval Pori)coated in jaggery syrup and shaped into balls. Somewhat like our chikkis in a different shape.
