Almond Butter - add healthy fats to your diet!
Nut butter is a great way to add healthy fats to your diet. You can make them easily at home and store for a couple of days. Try this simple, quick-to-do recipe of making your own almond butter.
Sesame and Other Seed Butters
Roast sesame seeds on a slow flame till the popping stops. Do not let the seeds burn. The slower you roast them the better they will be. Place them in the grinder up to a height of 1 inch. Grind until it turns to butter. If it is not evenly crushed, stir and grind again. Variations Use the sesame seeds without roasting them. Being raw, this is healthier than the roasted version, and some people like it as much. A similar butter may be made with sunflower seeds. To know more, please visit https://sharan-india.org/
Parmesan Cheese - Dairy-free! Raw!
A lot of Italian dishes call for Parmesan cheese to be sprinkled on top. We have a tried and tested vegan, dairy-free no-cook version of Parmesan, made with cashewnuts.
Raw banana pith/stem raita
Baledindu pachadi / Vazhaithandu Pachadi / Banana Stem Raita is a healthy recipe with the Banana Stem added raw to the plant yoghurt and seasoned with mustard seeds (optional). Banana Stem is super nutritious to have. It's rich in fibre and packed with nutrients and when combined with yoghurt is great as a chunky soup. I most often eat this as a yoghurt salad for lunch. Since it is rich in fibre it keeps you filled and satisfied as well.
Curd Chutney - dairy free!
Tambli/tambuli or a curd chutney is a typical Karnataka side dish similar to the North Indian raita. It is a concept of using a coconut base with a flavoring ingredient added to whisked curd. As the name suggests it would be thicker than a regular raita and more like chutney. There are a million ways to make it by changing the flavoring ingredient. It could be an herb, or a roasted spice or a specific vegetable or a mix of spices. Dairy free, no-cook!
Coconut Malai Curd - your non-dairy instant curd!
Here's how to make instant curd without fermenting, starter curd or struggling to set it. When you have access to tender coconut malai…make instant curd. Or when you haven't planned to prepare dairy-free curd but need one, try making this instant one! With just a couple of ingredients, you can have instant curd ready in a few minutes to use in raitas or to make curd rice.
Coconut Butter - easy replacement for dairy butter!
Many traditional Indian dishes use white butter as a side dish or accompaniment. While we do have a wide array of nut butters to substitute dairy butter, the coconut butter really seemed to be a hit with many of my friends who tried it. It worked very well during Gokulashtami where offering white butter to Lord Krishna is a norm in most parts of the country. You can make this in a matter of minutes with just one ingredient.
Pumpkin Seeds Milk - dairy-free, sugar-free plant-based milk!
Pumpkin seeds milk is a wonderful way to add these healthful green seeds to your diet. Pumpkin seeds are a storehouse of various minerals and vitamins and are known to promote bone health, amongst numerous other health benefits. Pumpkin seeds milk has a subtle sweet flavour and is not very distinctive. It is thereby a simple replacement to dairy milk, especially for kids.
Cashew Cheese - no-dairy, homemade!
Choosing to go off dairy need not mean giving up on your love for cheese. Here's a very simple recipe to make cheese without dairy. Use it generously and guilt-free in your favourite recipes! Is ideal for making cheesy sauces, dips and spreads or can even be used on baked dishes and will brown slightly when baked.
