Ragi Mudde, Ragi Sangati or kali is a wholesome meal in the state of Karnataka and the Rayalaseema region in Andhra Pradesh. It is mainly popular with the rural folk of Karnataka. Ragi mudde, a storehouse of multi nutrients, has only two ingredients, Ragi (finger millet) flour and water.
Sorghum Sankati (Jowar Balls) - gluten-free!
In our quest to find gluten-free, whole foods Jowar is an excellent alternative to rice and wheat. Andhra Pradesh has a popular dish called the Jonna Sankati or Jowar Sankati. It is usually a dumpling made of millet flour. Here we used broken Jowar/ Sorghum to prepare it. Wholesome, filling and healthy. It is very easy to make.

Sprouted and popped ragi flour is not only nutritious but ready to eat without any extra cooking involved. This dish is neither a complete upma nor a complete dry mixture. It falls midway and has just enough moisture to enjoy as a snack. Mothers always have a challenge to make healthy options for their kids and this is not only oil-free but also gluten-free. Varagu with Vegetables
Soak the varagu for 8-10 hours. Wash the varagu and let it boil in 2 cups of water. Add salt, turmeric, other spices and cover. When the water begins to disappear, add the vegetables, chickpeas, a bit more water and cook till the vegetables are cooked and the varagu is light and fluffy. Jowar Khichu – Gluten-Free! Oil-Free!
“Khichu” in Gujarati is actually a dough from which traditional papads are prepared. However, this dough alone is so delicious with raw groundnut oil that people eat it as a snack. Khichu can be prepared with different flours, rice, Jowar, Bajra or any other. It is a quick snack. I chanced upon this snack recipe while looking up for something oil-free and gluten-free, yet tasty, to make for my daughter and this was an instant hit. I have taken the liberty of marrying the Andhra Spice powder with the Gujarati Khichu and they lived happily ever after.

It is said to have originated in the Mysore Palace. It is made with a special spice mix. The rice in this dish can easily be replaced by millets of your choice. Please note that it is of the consistency of a porridge.
Millet Pidi Kozhakattai/ South Indian Muthiya- oil-free!
The Upma Kozhukattai or pidi kozhukattai is one of the most popular snack items in a Tamil Brahmin household. As the name goes ‘Pidi' means fist and the dumplings are shaped by pressing together in the fist, just like Gujarathi muthiyas. These are usually steamed rice grit dumplings. They taste great with sambar and chutney. In many households they are served dunked in spicy hot rasam. The same recipe can be enjoyed by replacing rice with millets. Mulligatawny is a soup which originated from South Indian cuisine. It's almost forgotten that it was known as the national soup of India.
