Dairy-Free & Sugar-Free Kheer with Sama Rice

Bajre ki Khichdi- Dairy free!
Bajra khichdi is a warming and nutritious khichdi made during winters. Its also a staple food in the regions of Rajasthan and Haryana. In this bajra khichdi haryana recipe, only bajra and moong dal is used along with a few spices. Bajra is the Hindi word for pearl millet. Everything is cooked in one pot, traditionally in clay pots. Since it is not so commonly made where I live, I tried out this recipe with the guidance and expertise of my dear friends Niti and Shikha. It is wholesome and filling and definitely fits the bill of being a soul food. You can enjoy this bajra khichdi with vegetables.
Millet Cutlet- gluten-free, dairy-free meal in a snack!
How about giving the humble millet a snazzy make-over? A healthy, flavorful and wholesome way to incorporate millet into our diet. It could double as a kid-friendly, lunch box idea. Filled with spiced coconut and served with luscious green chutney and shredded vegetables, makes it the ideal platter for a balanced meal.
Foxtail Millet Bread
1) Wash the millet well and soak overnight. 2) Next day, add sesame, sunflower seeds, flaxseed powder, chia seeds, salt, jaggery syrup, salt, cold-pressed coconut oil and psyllium husk powder in the soaked millet. Do not discard the water used for soaking. 3) Mix the batter well. 4) Bake in a preheated oven at 180 degrees C with both rods for 60 minutes.
Lemony peppery millet rice - with raw veggies
Millet rice is a good option to add diversity to the grains you eat. Mostly we end up eating just wheat and rice. But when nature has given so much choice, why not add some spice in life!! Millets are rich in fibre. This recipe is oil free and the veggies are largely raw and give a good crunch. You can have this alone or with a soup or curry. You can also serve this as a salad in parties. If you are ok to eat raw veggies, you can reduce the quantity of millets and increase the veggies.
Ragi Pancake with Spiced Syrup- toddler-friendly! Dairy-free!

Lauki Muthiya – Gluten-Free! Oil-Free!
Muthiyas are very popular in Gujarat. It derives its name from the gripping action on the dough to shape it. There are many ways to make it by varying the ingredients used in them and shaping them differently. Using greens, herbs and grated vegetables it is very flexible and lends itself to a myriad of ways to make it. One of the commonest ways is to use a combination of wheat flour and chickpeas flour. Here is a gluten-free version without oil. It makes for a great evening snack.

Savory Bajra Sevai Upma - a simple millet based snack!
Boil a pot of water. When the water is boiling, switch off the stove and add the bajra sevai. Leave it for 2 – 3 minutes and wash in cold water. In a wok sauté onions along with green chilies, urad and chana dals. When the onions brown, add the mixed vegetables, salt and turmeric and cook for 4 – 5 minutes till the vegetables are cooked.
